Ingredients:

4 cups cubed watermelon (seedless)

1 cup crumbled feta cheese

1/4 cup fresh mint leaves, chopped

1/4 cup thinly sliced red onion

1/4 cup balsamic glaze

Salt and pepper to taste

Optional: a handful of arugula or baby spinach for extra greens

 

Instructions:

Prepare the Watermelon:

Cut the watermelon into bite-sized cubes and place them in a large bowl.

 

Add the Cheese and Veggies:

Add the crumbled feta cheese, chopped mint leaves, and thinly sliced red onion to the bowl with the watermelon.

 

Season and Mix:

Drizzle the balsamic glaze over the salad. Add a pinch of salt and pepper to taste. Remember, feta is already salty, so you might not need much salt. Gently toss the salad to combine all the ingredients.

 

Serve:

If desired, lay a bed of arugula or baby spinach on a serving platter and spoon the watermelon mixture on top. Serve immediately for the best flavor and texture.

 

Tips:

Chill your ingredients: Make sure your watermelon and feta are well-chilled before preparing the salad for a refreshing bite.

 

Balsamic glaze: If you can't find balsamic glaze, you can reduce balsamic vinegar by simmering it until it thickens.

 

Add nuts: For extra crunch, you can sprinkle some toasted pine nuts or walnuts on top.
