Quark Expeditions has partnered with Igapall, a Greenlandic collective of Inuit chefs, to create Tundra to Table—an exclusive onboard dining experience that transforms a shared meal into a cultural journey. 

Led by accomplished chefs such as Miki Siegstad, Salik Parbst Frederiksen, and emerging culinary talent Iben Lange, the Tundra to Table experience offers guests a multi-course meal featuring ingredients harvested in accordance with Inuit traditions. The focus on sustainability, cultural integrity, and storytelling makes this more than just a special dinner—it’s a celebration of Arctic heritage. 

Menu highlights may include: 

• Beer-braised muskox with Greenlandic mashed potatoes and berry jam 

• South Greenlandic lamb with layered pommes Anna, turnip ragu, and wild gravy 

• Pickled halibut served with lumpfish dip and traditional Arctic bread 

• Honey-glazed ptarmigan paired with turnip purée and local greens 

Each dish is accompanied by the chefs’ personal stories, sharing the cultural significance of the ingredients, harvesting methods, and preparation techniques.
